Tomorrow is my little sister's birthday. She's going to be a teenager... that means I'm getting old. Yikes.

2. This is her and Thor-Bruno, the puppy. I can't decide which one is cuter.
3. This is what $3.25 child-size ice cream looks like. Nelson's Ice Cream=winning.
4. My brother and sister-in-law may disown me after publishing that photo. Shoot.

5. The more I run, the easier it gets. That makes me excited.

6. Remember that nail polish collection I wanted? Hubz ordered it for me... without me asking him too... after I agreed to let him order a new Xbox... Hm. Not sure how I feel about that anymore...

7. Sometimes getting dressed-up is fun. Especially when it involves Thai food and best friends.

Inspiring. Exciting. Epic. Jam-worthy. Suspenseful. That's about all I've got.

Oh, I should also mention the fact that you really can't go wrong when you combine strings and rock music. Skillet, anyone? Yellowcard, perhaps? Yes, please.

Apparently the person who lives a floor below me really digs this song too... as it's all I've heard for 30 minutes straight. I ain't complaining.

K.
Kaylahttp://www.blogger.com/profile/07185867227715097600noreply@blogger.com0tag:blogger.com,1999:blog-7968462466860068256.post-51016612626274396592012-03-26T20:31:00.000-07:002012-03-26T20:31:58.797-07:00raindrops keep falling on my head.I made it through week 1 of my 5k training and how am I rewarded? Rain. Again. This time coupled with cold, hard wind. Awesome.

But guess what? Once again, I did it. I didn't want to do it but I took the first step out the door and didn't look back. It was hard but I felt awesome after I did it. I even managed to do a 20 minute Zumba ab workout. Things they are a'changing, folks.

Also, did I mention that running hills is not enjoyable? Yikes.

K.
Kaylahttp://www.blogger.com/profile/07185867227715097600noreply@blogger.com1tag:blogger.com,1999:blog-7968462466860068256.post-52934888477871101452012-03-24T20:56:00.000-07:002012-03-24T20:56:45.159-07:00seven for saturday.1. My body is naturally waking up between 5:30 and 7 am these days... ugh. That is not the way I want to start my Saturday. Being an adult is hard. Jeepers.

2. Anyone want to volunteer to buy me this whole collection? Thanks in advance.

3. As nice as it is in Minnesota (75* in March!), I'm totally craving a trip to Belize right now. Seriously, what I wouldn't give to climb some Mayan ruins, get a massage in the rainforest and drink a pineapple Fanta. Somebody needs a vacation...

4. I want to make this recipe sooooo bad right now. I have been craving it everyday for the past week.

5. I would make that recipe this week buttttt... I have no money left in my grocery budget. We are pretty much going to be eating out of the pantry and freezer all week.

6. On the bright side, I have $25 worth of cheese and a $15 lobster tail to make lobster mac
tomorrow. Winning! But also poor. Shoot.

7. Hubz and I are rearranging our bedroom so subsequently our whole 700 square foot apartment is a complete disaster.
I was really on-plan and focused with my food, exercise and attitude today which I'm super excited about. Now the goal is to make days like today the rule, instead of the exception (He's Just Not That Into You... anyone? ANYONE?).

Workout
I started the day off right with a quick 10-minute upper body Core Fusion DVD workout. My triceps will definitely be feeling it tomorrow!
Breakfast
Lately I've been having oatmeal for breakfast pretty consistently, but with the weather getting warmer I'm starting to crave smoothies and shakes more often. This morning I had Shakeology (really love this stuff) blended with 1 cup skim milk, 1/2 a banana, 1 Tbsp. peanut butter and some ice. Icy and delicious!

I'm thinking that this breakfast may be a staple for the next few weeks!
Snack
While I was at work I snacked on a fruit cup with pineapple, mango, jicama, blackberries and a strawberry. I know the strawberry looks kind of pathetic... it was. There may have also been a mini cadbury egg that snuck in there without getting photographed. What can I say? It was camera-shy... or something.

That view right there? That's what I see everyday working the drive-thru at my coffee shop. Living the dream, people. Living the dream.

Lunch
Lunch was leftovers from last night and was ridiculously delicious. I made Jenna's Slow Cooker Chicken Tikka Masala which obviously did not disappoint (I've loved every recipe of hers that I've made!). This is definitely comfort food which is what I've been craving with the dreary weather outside.

I ate about half of a serving of the Chicken Tikka Masala with 1/4 cup of basmati rice. That's about half of the amount that I consumed for supper last night, but it was just the right portion for lunch (and fit into my Daily Points allowance a lot easier!).

I washed lunch down with an iced coffee with a shot of sugar-free caramel and 1 Tbsp. half and half. I only finished the amount shown in the picture. I wasn't really feeling it so figured there was no point in finishing it... especially since it was free, you know? Plus, the only thing in it that has any P+ is the half and half, and 1/2 Tbsp. of half and half is 0 P+.

(0 P+)

Friday is the 3rd workout of the training plan and I know it's going to be challenging! We're moving to running in two minute increments. I know I can do it though!
Snack
After my workout I fueled back up with 4 carrot sticks, 1 ounce of dried apples, 12 almonds and a Laughing Cow Queso and Chipotle wedge. My own little afternoon plate. Cute. I know it sounds like a lot of food but I was seriously famished!

Dinner
For the second time today, I had indian food. It's the new thai curry, my friends. Comforting, spicy, sinus-opening and soooooo yummy! I used this recipe for Aloo Gobi (Cauliflower and Potatoes) and it turned out really good. Next time I would like it to have a little bit more sauce though. I'm all about sauce.

We served this up with 1/2 cup of basmati rice, cilantro and a bunch of hot sauce, obviously. I think tomorrow I'm going to mix this with the rest of my leftover Chicken Tikka Masala. Yummmmmmm.

As you can see, I didn't do a very good job of going green with my WIAW, but I did get a lot of fruits and veggies in and today that's good enough for me.
It ranks right up there with Gilmore Girls marathons, Just Dancing and making awkward Song of Solomon references.

One of my favorite parts of Pinterest is finding new recipes! Surprise, surprise, I know. As I mentioned earlier this week, with spring here and summer quickly approaching, I've been craving more fresh produce, salads and lighter food in general. The problem comes with me not being the biggest fan of salads. Let me explain. If I'm going to enjoy a salad it better be a freaking monster salad. It better have toppings. The dressing better be ridiculously awesome. Iceberg lettuce is not allowed in my house. Simple salads as a meal just doesn't cut it, folks.

Pinterest to the rescue, my friends! After seeing a picture of this salad, I knew that I needed to try it... with a few changes, of course. Someone just can't leave recipes alone!

This makes a wonderful salad for lunch! It's big enough and plenty filling to be an entree, but if you'd prefer I'm sure it would be great with chicken or some seafood.
Guilty pleasures. Ugh... there's nothing better than a guilty pleasure: They are semi-embarrassing, usually hilarious and not a fact you usually find out about someone until you really know them.

Since we are becoming closer and closer every day, I figured it was about time you learn some of my guilty pleasures:

Even though I'm really, really bad at it, I love playing Super Mario Bros on my Wii. Hubz sits next to me on the couch and just giggles as I miss 3 coins in a row, accidentally run into a mushroom and fall into the lava... all at the same time. Now that, my friends, is talent.

I would probably wear leggings as pants 90% of the time if it was socially acceptable. No joke. As I'm sure you know, I don't have the type of body that makes this admissible. Does that stop me? Heeeeeeeeeck no. THEY MAKE ME FEEL FREE, OK? Sorry I'm not sorry.

One of my favorite songs of all time is about an affair. You can't tell me that every time you hear "Me and Mrs. Jones" by Billy Paul you don't start to sway and sing along in the kitchen. YOU CAN'T DENY IT! The lyrics are completely against my moral values but Billy Paul's voice is butt-aaaa. Le-sigh.

I like regular soda. Love it, in fact. I know it has absolutely no nutritional value, but there's just something so satisfying about the fizz and the cold refreshing taste after a long day served up with some tacos! Yummmmmmmm. I had a Dr. Pepper tonight and I don't regret it one stinking bit.

TV marathons are probably my worst guilty pleasure. I could honestly watch the same episode of the same show more times than I'm willing to admit. I've watched every episode of "The Office," "Chuck" and "Friday Night Lights" at least four times. This is what happens when you are broke and can't afford cable, people. I'm currently watching every episode of Gilmore Girls for the third time. Gilmore Girls has to be one of my favorite shows of all time. The humor is fast, witty and hilarious and I kind of want to be BFFs with <s>Lauren Graham</s> Lorelai Gilmore. The last episode I watched featured a scene in a night club with a live band, which just so happened to be The Shins. I loved The Shins in high school (who wouldn't after seeing Garden State?) but haven't listened to them much since. This song is so catchy in a really not-annoying kind of way, you know? And I just love the WhooooOOOO-HOOOooo! Just listen to it and you'll understand, ok? Stop judging me!

Get it now? WhooooOOOO-HOOOooo=the best part of the whole song.

What are your guilty pleasures?

I moved to Minnesota to attend college when I was 18 and have lived here ever since. All that to say, you would think that by now I would be accustomed to winter, snow and being frozen to the bone.... yeah, not so much. Imagine my delight with the winter weather that we had this year.

This time last year I was still wearing a down coat and snow boots... today I wore leggings, a t-shirt and flip-flops. I could get used to this! 75 degrees in the middle of March? Yes please!

Other signs of spring:
Today Hubz and I started the Weight Watchers 5k training plan. I ran a 5k about two years ago and even though I felt amazing after I finished it, I haven't really ran since that day. Lame.

2010 challene obesity 5k--Como Lake

I've been disappointed in myself that I haven't continued running since then, so yesterday I decided that it was time to get back to it. If you don't like something, change it--that's my motto lately.

Lucky for me, the Hubz loves to run (though he also hasn't done it much lately) and running together is motivational for me, even if I want to strangle him for being so stinkin' positive by the end of the workout.

Today was Day 1 of the 5k training and as we stepped outside, it was quite obvious that we would be wet by the time we got inside... Little did we know just how wet we would be! We continued the plan as long as we could, until the lightning and thunder were getting too close for comfort. By the time we got inside (soaking wet!) we had finished about half of the Day 1 workout and I was... <strike>relieved</strike> disappointed.

Wait... what? Did I just say that? Yeah. I did. I was sad we couldn't finish because of the weather. I really wanted to prove to myself that I could do it.

I honestly wasn't ready to be done, it just didn't feel right. When we got inside we did the stairs a couple of times (and consequently got the stairs rather wet... oops!) and that made me feel a little bit better.

So even though I'm kind of bummed about tonight's circumstances that I couldn't control, I'll count today as a victory, and tomorrow I will continue with the plan. I mean, let's be honest, considering this was basically my first run in 2 years, the fact that I made it as long as I did (really, that I even started the workout) in the POURING RAIN is a huge accomplishment. I could have easily used the weather as an excuse not to workout, but I didn't... and that's HUGE for me.

this is what I look like after running... in the rain

So tonight I'm gonna go to bed satisfied and eagerly anticipating tomorrow's workout. I don't even know who I am today... but I'm kind of liking it. Awesome.
In case you were wondering, I did finish the juice fast -7 hours. I would have finished it but my body honestly needed food. I was running around like crazy at work for 3 days and my body just wasn't holding up like I needed it to be. Am I sorry that that's the way it ended up turning out? Sure. Do I feel bad that I stopped the fast early? Absolutely not. I refuse to feel bad for listening to my body.

2. I would definitely do a juice fast again... But I would probably only do it for 3 days at a time and would need to supplement it with something such as Greek yogurt or something. We'll see.

3. Hubz and I went for a 7 mile walk this afternoon. It was hard, invigorating and a good excuse to have 2 hours of uninterrupted time with my BFF. Cute.

4. Paying for things like a hotel room and an <strike>expensive</strike> incredible dinner in cash is pretty freaking cool. Hubz and I did that last weekend. Budgeting and saving FTW!

5. I need this necklace in my life, like now.

6. The Hubz and I both have strong feelings about caramel rolls: we wanna marry them. We're all about moderate indulgence in life's greatest pleasures. A life with no caramel rolls is not a life worth living, my friends.
7. I've been obsessing over this blog for the past two weeks. Can you say motivation? I can. This girl is amazing. For reals.
Just wanted to let you all know that I'm still here and kicking... just been super-duper busy the past week. Hubz and I had a little weekend getaway that was fabulous that I will talk more about later. Also, in case anyone was wondering, I did finish the juice fast and will also talk more about that later.

I'm hoping you'll hear from me tomorrow... Bed time for me now!
Only one more day until I can chew real food. Who knew that was such a luxury? I do now. I'll talk more about this later, but doing this juice fast really, really makes me remember how much I love to cook and appreciate real food. I'm not craving processed and super sugary foods (well except for fish fry... even though I'm not Catholic, Lent always makes me crave fish fry), but I'm really looking forward to eating oatmeal, roasted vegetables, quinoa, tilapia, almond butter and greek yogurt. So close!

I had a really busy day today and ended up buying a juice at the local co-op because I knew I wouldn't have time or motivation to clean the juicer while rushing around to appointments, errands and meetings.

By the time I got home and was ready for "supper," I was exhausted, hungry and rather cranky. All I wanted was stir-fry, curry, taco salad, salmon, roasted potatoes and possibly even a veggie burger. You know, no big deal. Eventually I convinced myself that I only have 4 juiced meals left until I could enjoy all of those things (though hopefully not all in one meal...), and I would be really disappointed with myself if I quit this thing now. Needless to say, it took a lot of pumping myself up to pull out the juicer, oranges, lemons, spinach, celery and ginger. It took a lot of pumping myself up to clean the juicer. And it certainly took a lot of pumping myself up to drink the juice and pretend like it tasted as good as fish fry... But pump myself up I did. The Black Eyed Peas also <strike>may have</strike> definitely helped pump me up.

For the past 48 hours I have consumed nothing but juice. Literally. Who am I? I don't even know.

Now, let me preface this post with a few points...

I know detoxing and fasting is super controversial, but let's keep things friendly, shall we? Thanks much.

I'm not advising anyone to alter their diet or start a juice fast.

I still am a member of Weight Watchers and still whole-heartedly support and advocate the program.

I am not primarily doing this juice fast for weight loss purposes. Any weight loss is just a welcome side effect.

I did do a fair amount of research before starting this fast and am not walking into it blindly.

So let's backup a bit, shall we? Lately I have really been enjoying all of the documentaries that I can stream online with Netflix. Not surprising, I thoroughly enjoy the food and health-based documentaries like "Food, Inc." and "Forks Over Knives." A week or two ago I enjoyed another health and food centered documentary, "Fat, Sick and Nearly Dead." After watching it once, I convinced Hubz to watch it with me the next day. In a nutshell, the creator of the documentary does a 60-day juice fast, loses 70 pounds, basically reverses a disease he's had for several years and comes out of the whole thing super duper healthy! Yay! Even though we have wanted to purchase a juicer since we first got married (almost a year and a half ago--crazy!), this documentary convinced us to buy one!

I've been wanting to do a detox or a cleanse for quite a while. I have just felt the need to reset my body and give my system a little rest while still giving it all the nutrients it needs. I also wanted to do a type of detox during Lent because I know that it will cause me to really focus on not only my physical health, but also my emotion, mental and spiritual health. Win-win. So I decided to undergo a very similar regimen as the creator of "Fat, Sick and Nearly Dead," though for a much shorter time. I'm aiming for five days. It's quite a challenge but I'm up for it, and so far so good... well, sort of.

One thing that I didn't necessarily follow the instructions from my research on was that I should have probably cut out animal products, excess sugar, caffeine and other food products that aren't as nutritious for your body for a few days before starting the fast. I... didn't. In fact, Friday, the day before starting the fast I enjoyed copious amounts of coffee, a big blueberry muffin and spaghetti with ground beef. Possibly not the best life decision. Lesson learned. So without further ado, here's what the past 48 hours of my life have looked like:

Saturday:

Breakfast:
Juice from 1 orange, 3 carrots, 1 cucumber, handful of broccoli, handful of spinach and a handful of kale

This was probably my least favorite juice so far... but it got lots of dark greens into my system right away, though it was probably a shock to my system!

Lunch:
Juice of 1/4 a pineapple, couple handfuls of spinach, a couple of strawberries and half an inch of ginger

This was deeeeelicious! Probably my favorite so far. Supposedly the pineapple, spinach and ginger are supposed to help relieve menstrual cramps, which I unfortunately was afflicted with.

Dinner:
Juice of 5 stalks celery, 2 big handfuls kale, 1 lemon, 2 apples and a half inch of ginger

This one was also really good. Though it was a little bit too acidic for my stomach. Maybe next time I'll try to cut down on the lemon and ginger a little bit.

Beverages:
Lots and lots of water and two cups of decaf green tea

How do I feel?
As I already stated, I'm suffering from the cursed female ouch time so it's hard to tell which "side effects" are from the juice fast and which are from the PMS. This is way TMI, I know, but I can't lie, I spent A LOT of time in the bathroom this morning and early afternoon. I was <strike>slightly</strike> totally miserable. I also have had a headache for quite a bit of the day, and am generally just kind of crabby and irritable. I haven't really wanted to quit, but it's been amazing to see the emotional attachment that I have to food. I have been craving spaghetti and roasted potatoes with rosemary all day. I don't really crave chocolate or sweets so much. I'm a born and bred South Dakotan, so meat, potatoes and me are likethis. Am I crazy for trying this? Probably.

Sunday:

Breakfast:
Juice of 2 apples, 3 carrots, 4 strawberries, 2 handfuls of kale and half an inch of ginger

This one was really really good again. It's amazing what a couple of fruits can do to disguise the taste of dark leafy greens like kale and spinach.

Lunch:
Juice of 2 oranges, 1 apple, 3 carrots and 1 stalk of celery

This juice was super tasty, the only downside is that it didn't have any dark greens which I have been trying to incorporate into most of my juices. The dark greens make your juices super nutrient dense and have more protein, which was one of my concerns when starting the fast.

Dinner:
Juice of 2 cucumbers, 2 apples and 3 carrots

This juice definitely wasn't my favorite. It wasn't bad but it also wasn't great. I probably won't make it again, or will need to alter it so that I can enjoy it.

Beverages:
Tons of water, one cup of rooibos tea, one cup of detox tea and one cup of decaf green tea

How do I feel?
I woke up feeling pretty good today. I got decent sleep and even though I woke up feeling hungrier than normal, I felt fine after some water and my morning juice. I noticed that my biggest food cravings are right before I juice, when I get the most hungry (I know, big surprise). Overall I feel way better today, though it could be because my cramps aren't so bad. I didn't have to spend much time in the bathroom today (thank goodness!) and I think overall I was less crabby. My headache was a lot worse today. I know that my body is going through the major detox phase right now and that's why I'm not feeling as good. I'm hoping that by tomorrow I'll be feeling really good. I've been told that after a few days you start feeling really good and energized.

So that's how it's going so far! We'll see how I'm feeling in a couple more days. I'll definitely update you. I'm excited to see how the rest of this little experiment goes.

Have you ever tried a detox or a cleanse? How did it go?
The days leading up to my Zumba class, I was ridiculously nervous about... everyone kept telling me that it was so.much.fun but I was super worried I was going to look like a fool. I have rhythm and all, after all I was a musician for many years of my life, but quite often my body just doesn't quite move the way I tell it to. AKA: I'm quite clumsy. It's really rather unfortunate.

But of course, it was ridiculously fun. I sweat and shook my booty off for a full 2 hours and I can't wait until I have the opportunity to do it again.

After going to the class, I had to do my research (read: watching YouTube videos for hours on end) to see what different Zumba classes were like and to get more of a feel for the workout. Eventually I found a gem of a video... a Zumba routine to the song "Sexy and I Know It" by LMFAO. I know it may be a little bit "risque" but I have to admit, I do have a little bit of a <s>soft spot</s> guilty pleasure for the song. Come on, I know you do too. I mean really, is there any better way to wake up every morning than with the affirmation, "I'm sexy and I know it!"? Yeah, I thought not.

So when I came across this video, I was immediately drawn to it because of the song, but as I continued to watch it, I was drawn to it for another reason... an adorable, white haired, 75-year-old-grandma-who-can-get-funky kind of reason.

Zumba: You come for the music, you stay for the grannies. Awesome.

Have you tried a new workout lately?

1. The best friendships are the ones where you can pick up right where you left off

2. Doing the dishes is highly overrated

3. Poaching eggs is really, really hard

4. Fried drippy eggs taste just as good as poached ones... and are really really easy

5. Afternoon naps are perfectly acceptable on Saturdays

6. Free stuff is the best stuff

7. Zumba is the most fun workout in the entire world... and makes me sweat like whoa

I mean really, unless you're working, there's just something wonderful and exciting about Friday nights. Hubz and I are kind of an old couple though, so we don't really go out much on Friday nights. Instead, we enjoy hanging out at home and just relaxing, not having to worry about waking up early the next morning (although I do have to work tomorrow morning, I'm just pretending I don't).

Tonight was no exception. We started the night off with a workout,
I'm so excited to be back with another What I Ate Wednesday post! I'm hoping to do these every week starting NOW because it's fun and helps me stay on track with healthy eating :)

I've been a little on-again, off-again with following Weight Watchers the past couple weeks, but I decided this week that it's time to really buckle down and commit fully, cause otherwise I'm just wasting my money and will regret not starting earlier, ya know? Also, I'm just not happy with how I look and feel so the most logical thing would be to change something, right? Yeah, so there's that.

So I had a great day to day and I'm pretty proud of my eats and workouts! I started the day off with a quick 30 minute exercise band video that. It was my first day doing this video and I didn't love it. I'll probably try it again though, we'll see.

(2 AP)

Breakfast

Hubz and I are completely stocked with Chobani right now. We've been trying to work through our stash of it, but when I went to the grocery store yesterday they had the new Chobani flavors! So today I got to try the Blood Orange flavor. Unsurprisingly, it was totally delicious.

Normally I would eat more than this for breakfast, but I was running around for most of the morning and it was all I had time for.

(3 P+)

Snack

I normally don't really have a snack between my breakfast and lunch because I normally eat breakfast around 8:30 or 9 and have lunch around noon. It really depends on my work schedule though. Today I did have a snack, though, and it was like, the best snack ever. Seriously.

I know it's hard to see what it is in the photo, but it was 1/4 cup of dried apples (Trader Joe's) and 10 raw almonds. SO yummy and pretty filling! I will definitely be doing this snack again!

(3 P+)

Lunch

Lunch was super simple today. Basic mixed greens salad with some matchstick carrots and grape tomatoes. Dressing was 2 tbsp of ranch, which I realized today is A LOT. From now on I will definitely stick to just 1 tbsp, which is better anyways cause ranch is really empty calories (but it's delicious!). For some protein I had two over-easy eggs which really never disappoint.

Yummmmmmm.

(8 P+)

Snack

I grabbed coffee with a friend this afternoon and grabbed a small skim almond latte. Seriously, if you haven't tried an almond flavored latte, they are DELICIOUS. Almond breves ridiculously delicious (the froth tastes like whipped cream I tell you!), but guess what? Eight to ten ounces of half and half is not exactly weight loss friendly. Surprised? I was too.

After coffee I also enjoyed a grapefruit. I've always loved grapefruits, but I especially love them right now cause they're so CHEAP! Love it.

Citrusy.

(0 P+)

Today Hubz and I also started doing 30 Day Shred. I've done it a few times before, but I really want to actually do it for 30 days straight. I can do it and I know I'm gonna feel great after I do. We also took before pictures and our measurements today, so I plan on posting those after we finish the 30 days!

(5 AP)

Dinner

Once again, super simple but filling dinner! I was ravenous after doing 30 Day Shred and kind of forgot to take a picture before I started to scarf down my food. Sorry!

This WAS some grilled chicken breast (made on the George Foreman which was ridiculously easy) with a little olive oil and seasoning, a serving of sweet potato fries from Trader Joe's with 1 tbsp of ketchup and some more of the same salad from lunch with fat free italian dressing and 1 tsp of olive oil. Plus, a few unpictured pringles for dessert :) It happens, y'all, it happens.

(13 P+)

So not the most interesting What I Ate Wednesday, but sometimes simple and basic is the best... plus it makes life a lot easier!

Total P+ Used: 31 (hit my daily target right on the nose!)

AP earned: 7 (super proud of this!)

Hope your Wednesday was stellar! ;)

K.
Kaylahttp://www.blogger.com/profile/07185867227715097600noreply@blogger.com1tag:blogger.com,1999:blog-7968462466860068256.post-82052264484359826672012-01-04T20:03:00.000-08:002012-01-04T20:03:11.825-08:00Curry ComfortI don't know about you, but winter puts me in the mood for comfort food. Warm, delicious, hearty dishes that not only warm up the belly, but warm up your soul. Sometimes I swear I should have grown up in the south because I am all about the soul food, baby.

Besides the obvious macaroni and cheese, mashed potatoes and apple pie, my comfort foods tend to be a little odd...

Bad day at work? Bring on the buffalo wings.
Angry with the hubz? Brie, crackers and fig jam will do the trick.
Need to just feel warm and cozy? Curry, baby, curry.

It's just been in the past year that I've fallen in love with Thai curry... in LOVE, I tell you. There's just something about the spiciness from the curry paste and the sweetness from the coconut milk that can turn an awful day into an I-have-the-day-off-and-am-lying-on-the-couch-watching-chickflicks-and-eating-salted-caramel-chocolates-in-my-yoga-pants-and-oversized-sweatshirt-just-because-I-can type of awesome day. It really is that good. Seriously, it's so.freaking.good. GAH!!

This recipe would be awesome with chicken as well, if shrimp isn't your thing. Or you could even leave out the rice noodles and serve the curry over rice. It's so versatile, and super delicious no matter which way you prepare it! You could also use light coconut milk, but I always think the light stuff leaves a bit to be desired, though it does make the recipe lower in fat.

Thai Curry Soup with Shrimp
Adapted from Weight Watchers

1 pound uncooked shrimp
12 oz low-fat evaporated milk
12 oz canned coconut milk
1 cup water
3 Tbsp thai curry paste, red or green
Red pepper flakes, to taste
1 red bell pepper, chopped
2 cups chopped mushrooms
3 oz packaged rice noodles
Cilantro, for garnish

1. Pat shrimp dry with paper towels. Spray a nonstick skillet with olive oil spray and heat over medium heat. Season shrimp with salt and pepper to taste, then cook in skillet until just opaque. Set aside.
2. Combine the evaporated milk, coconut milk, water, curry paste and red pepper flakes (I like my curry REALLY spicy so I add a lot of pepper flakes, but it's totally up to you) in a large pot set over high heat; bring just to a simmer. Add the bell pepper, mushrooms and rice noodles; bring back to a simmer. Adjust the heat and simmer gently, stirring occasionally, until the noodles are just tender, 8-10 minutes.
3. Stir in the shrimp and continue cooking until heated through, about 3 minutes more. Ladle into bowls and top each portion with cilantro, to taste.

Yields 6 (1 cup) servings. WW P+: 8 per serving (P+ calculated using the weightwatchers.com recipe builder)
P.S. Go make this... NOW!Kaylahttp://www.blogger.com/profile/07185867227715097600noreply@blogger.com0tag:blogger.com,1999:blog-7968462466860068256.post-18242132072605381232012-01-02T20:22:00.000-08:002012-01-02T20:22:51.555-08:002012 GoalsHere we go again, another year has come and gone. Ridiculous. By now, you've probably realized that the list didn't get completed by the end of 2011. Disappointed? Yeah, I am a little bit too. But, all in all I'm ok with it. 2011 took me down a road that I wasn't expecting and I think all things considered, I crossed off a good amount of my list. I realize now that my list was a little lofty, and considering that a lot of the items cost a decent amount of money, a bit out of reach. That's ok though. It gave me something to work towards and caused me to get out of my comfort zone. It also forced me to start this blog which, though it doesn't seem it due to my lack of posting recently, has been one of the best things I've done for myself in a long time.

So what's happening with the list now, you ask? Well, as of now my plan is to make that list a "101 in 1001" list. Therefore, my new goal is to complete everything on my list by September 28, 2013. I think this is a lot more feasible and I'm excited to see how it turns out!

Now a little housekeeping business, my december goals? Major fail on almost all fronts. Once again, I failed to realize how CRAZY December was going to be for me. Besides all the Christmas craziness and family gatherings, I also started a new work schedule that I've been trying to adjust to. Regardless though, I hate setting goals for myself and failing to complete them. One of my major goals for 2012 is to change that.

Tomorrow I hope to share with you my goals for January, but here are my 12 goals for the year 2012:

Spend more time in prayer and reading the Bible. Pretty self-explanatory. I've been slacking at this and it hasn't done anything good for my life.

Lose 50 pounds. I'd love to say that 50 pounds would put me at my goal weight, but truth be told, even after 50 pounds I'll have a ways to go. I believe that 50 pounds is attainable and reasonable, however. I know I can do it... I just have to do it (go figure, eh?).

Find a job that I'm ok with. Yeah, that sounds as bad in writing as it did in my head. I love my barista job, but the cold hard truth is that I want to make more money. I want to be able to pay off debt quicker, I want to be able to give more to others and honestly, I want to do more things that cost money! Sorry I'm not sorry. However, I'm not sure that I'm going to be able to find a job that I'm really passionate about at this time in my life. A lot of this is because my passions are other places right now. I'm passionate about being a wife and serving my husband, I'm passionate about trying to find a healthy lifestyle and I'm just not sure what I will be passionate about as a career. I'm ok with that though. I'm only 22. I have time to figure it out. Plus, my ultimate dream-job? Stay at home mom. Yep, I said it.

Go on a real vacation. When I say "real" I mean something like a cruise or going to California... Not going to Chicago for the weekend. A real vacation that's like 7 days. It's completely selfish but I think it's good for the mind and soul. We all need a vacation.

Pay off debt. Hubz and I met at a small, private Christian college. People who meet at small, private Christian colleges tend to accrue a decent amount of debt. It sucks but we both agree it was worth it. My goal for 2012 is to pay off a few small debts (equalling less than $1000), all our credit card debt and my car loan. Yes, it's lofty, but I think that if we really buckle down and I start bringing in more money, it's definitely something we can accomplish.

De-clutter. We have a lot of stuff. How we got all this stuff, I'm still not sure, but there is a lot of it. I really want to start living more simply and de-cluttering and getting rid of stuff is the best way to do it. AT the end of the day, that's all it is: STUFF. We don't need a lot of stuff, especially considering we life in a 700 sq. ft. apartment.

Begin saving more. I would like to have at least $3000 saved by the end of the year. Having that cushion would relieve a lot of stress and even allow us to do things like take vacations, begin saving for a house, etc.

Read 12 books. After college I kind of stopped reading for a while. Recently I've started reading more and realized how much I missed it! I think that one book a month is pretty reasonable, and actually think there's a good chance I'll read more.

Join a nice gym. Hubz and I belonged to a cheap-o gym that neither of us liked for half of 2011. We ended up canceling our membership because we never used it. Although I really like working out at home, it would be really nice to be able to take classes at a gym, swim in the pool and even step on a treadmill every now and then!

Move! Hubz and I are feeling a little trapped at our apartment right now for multiple reasons. We're wanting to move somewhere bigger and nicer (who knew cabinet space was such a commodity?), but that obviously costs more money. And honey, moving ain't cheap. I'm hoping that we will be living somewhere else by this summer.

Gain revenue from the blog. This obviously forces me to become a better blogger, as well as a more consistent blogger. I really want to spend time on my blog in 2012 and really invest in it. When I'm writing often and expressing myself through writing, I feel at my best. I'm ready to take Keeping Up With Kayla to the next step, I'm just not sure how to get there yet.

Watch less TV. Hubz and I don't have cable or anything, but we do have Netflix, and I make sure we get our money's worth on it. When I'm home alone in the afternoons, I like to have some sort of noise, and usually that ends up being the TV. I don't think I realize how much time and energy gets sucked into that stinking digital box every week. I need to unplug more. I know it well help my productivity and will help Hubz and I spend more quality time together.

So that's that. Hope you're feeling as motivated as I am to make 2012 awesome!

K.
Kaylahttp://www.blogger.com/profile/07185867227715097600noreply@blogger.com3tag:blogger.com,1999:blog-7968462466860068256.post-66369268523879806102011-12-16T19:37:00.001-08:002011-12-17T07:54:41.314-08:00sick as a dogFor the past 24 hours, I have kind of felt like death itself, sniffling, coughing and feeling like my head might explode. Imagine my enthusiasm. Luckily, I was able to get a co-worker to cover my shift today, although in the hourly-wage world that means that I'll be missing out on some hard-earned cash. Boo.

So as I was lying on the couch watching "Parenthood" on Netflix, guzzling water and feeling bad for myself, I figured that I might as well take this opportunity to share my essentials for when the cold of death overtakes your immune system.

1. Juice. Much to the dismay of Hubz, I'm not much of a juice drinker and rarely ever buy it. However, when I'm sick, juice is a must, preferably Naked juice.

Vitamin c is a must for me and this stuff is tasty!

2. ...More vitamin c! Surprise surprise. Grapefruits have been on sale lately at the grocery store and we loaded up on a whole bag of them.

Lately I've been just eating these like an orange, except that I have to take the actual fruit out of the skin of each section. Make sense? I just can't handle that stuff. It's too thick!

3. Leafy greens. Obviously these babies are healthy for you and are an important part of any diet the way it is. I always feel better and have more energy when I eat more spinach and other leafy greens. When I'm sick I feel completely drained of energy so these definitely help.

4. Tea. Nothing makes me feel better than a mug of tea. It soothes my throat, helps ward-off headaches and just makes you feel comforted.

This tea is is one that we got at my favorite coffee shop in Sioux Falls. It's orange passion fruit and it's super mild. I love it.

4. Showering. When I'm sick, I'm usually in the tub at least twice a day. There's just something about the hot water streaming down on me that just clears out my sinuses and allows me to breathe... At least for half an hour or so.

5. Omega 3 fatty acids. Today I had salmon for lunch, not only because it's delicious and it's what I had at home, but also because of the omega 3 fatty acids. Omega 3s are super good for you and most people are deficient of it. It helps brain function, immunity and also helps your hair and skin be healthier! Salmon is a great source of omega 3s.

6. More omega 3s. I take a daily fish oil supplement for all the above reasons, especially since I don't eat a lot of salmon, mainly because of how much it costs to get quality salmon.

I got these supplements at the chiropractors office, but you can find fish oil supplements pretty much anywhere you can get other supplements and vitamins.

So that's it... Plus if all the above fails, I'm also rather fond of the blue Tylenol PM cough syrup. It knocks me out like.that and after I wake up from a 3 hour nap I usually am feeling significantly better.

So tell me, what are your "sick as a dog" essentials?

i want 2012 to be everything i hoped 2011 would be... but i'm not giving up on 2011 quite yet. i've still got one month left, and even though it's the craziest month of the year and i have 11 christmas celebrations i'm expected to attend, i want to make this last month of 2011 count. here are some goals to help me transition into 2012:

complete the chalene johnson 30 day challenge. i attempted to finish this in october but fell off the bandwagon about halfway through the month. it's a really cool challenge though and i know it will help me accomplish both short-term and long-term goals if i stick with it.

workout at least 1000 minutes. this can be anything from walking to yoga to a beachbody video, as long as it gets my heart-rate up and my fat cells crying, it counts. hopefully this will counteract some of the christmas treats and craziness... and hopefully it means that i won't need to ring in the new year with bigger jeans.

have at least two date nights with the hubz. with all the time that we will be spending with friends and family this month (which is such a blessing, may i add), it's important that we get some alone time to keep our relationship in check and keep my from getting crabby-crazy. plus, it's just plain fun.

track food/exercise intake every day. this probably sounds kinda crazy but i'm really trying to commit to my weight loss and right now that means tracking everyday and staying committed everyday. at least with weight watchers i can still have a couple mint mochas and coconut bon-bons and i don't have to feel guilty about it.

blog at least 7 times. i don't like how little i've been blogging lately. blogging brings me joy, purpose and an outlet from everyday life. i don't want to let something that i enjoy and is actually good for my health to slack just because life is crazy.

so that's that. i want to end 2011 on a positive note and get a jump-start on 2012. join me, will you?

-k

p.s. i hope there's a lot more of this happening in 2012... just sayin.

my autumn soundtrack has been completely saturated with "non-Christian" bands that echo longings for faith, peace and a connection to a higher power. i love how the Lord can use songs like those to speak to me and bring me joy.

i could probably do a tuesday tune every week until the end of the year and find a different mumford and sons song that i love, but this one seems especially poignant as of late. the Christian overtones in this song seem so undeniable to me, and the song represents starting over and the grace that all those who believe are given.

"it seems that all my bridges have been burned
but, you say that's exactly how this grace thing works
it's not the long walk home
that will change this heart,
but the welcome i receive with the restart."

so.stinking.awesome.

also, how great is the banjo and irish-pub feel of the whole song? not that i've ever been to ireland... but i've got a pretty good imagination. plus, i've seen "p.s. i love you" about 37 times. sorry i'm not sorry.

I get bored easily with blogs that show 3 meals a day, everyday, but I find it fascinating to see what others eat daily every now and then. So here we go!

(I apologize in advance for blurry pictures... often when I am ready to eat I am READY TO EAT and have little patience to spend 5 minutes or more taking photos of the food that I want in my belly! This is normal, right? Probably not. Whatever.)

French Press Coffee! It's been so long since I've french pressed that I forgot how DELICIOUS it is! So much better than drip brewed coffee, but takes just as little time! Awesome!
Next time though, I'll either cut down on the greens or add a little more egg salad (or maybe just some dijon mustard?). It just needed a little more dressing.
